Aroma
A complex, fruit-driven nose, with an intense, yeast, nutty character.

Palate
A rich, full-bodied sparkling wine with a fine bead and crisp acidity. The palate is sustained and is dominated by full-flavoured toasty peach and vanilla spice.

Overview
This wine was produced from grapes grown in the Central Region of New South Wales, which is generally cool, providing ideal growing conditions and a resultant base wine with distinctive varietal character. Subtle use of oak has also accentuated the richness of the wine, giving additional complexity. Chardonnay grapes were machine-harvested at night and processed reductively with minimal skin contact. The resultant juice received a light fining to remove phenolic material and was then filtered into a stainless steel tank for fermentation. Post-fermentation, the wine was stabilised then re-fermented using the Charmat process, generating natural C02 prior to bottling.
