12 x De Bortoli Selection Shiraz 2009

dB Selection varietal wines are made at the De Bortoli Bilbul Winery where more than 75 years ago Vittorio De Bortoli established the family company, crushing 15 tonnes of Shiraz in his first vintage. Carefully selected fruit is harvested at optimum maturity to produce wines with true varietal expression.

Viniculture - The lead up to the 2009 harvest in the Riverina was one of the best on record,with refreshing rains during spring and mild December temperatures. this lead to fruit with flavour intensity and acid structure not seen for a few years. This all changed at the end of January with an unprecedented heat wave of plus 40 degrees for 14 days which saw ripening stall for 3 weeks. Overall the vintage was good to excellent.

Vinification - Fruit was selected by the winemaker and picked when both flavour profile of dark fruits and Baume were optimum for the desired wine style. Average 7 days on skins at 22- 25 °C.

Palate - A full rich red wine showing nice ripe primary fruits upfront, a fleshy mid palate and finishing with silky chocolate like tannins.

Appearance - Deep red with a purple hue.

Bouquet - Sweet dark fruits (plum and blackberries) a touch of spice and well integrated toasty mocha oak.

General Characteristics - Dry and full bodied.

Suggested Cuisine - A variety of beef and lamb dishes.

Cellaring - Best Enjoyed while Young and fresh. Could cellar for a few years in favourable conditions.
